Peach short cake

Peach short cake


Ingredients for short cake
  • Flour 3 cups
  • Caster sugar ½ cup
  • Baking powder 4 tsp
  • Salt ½ tsp
  • Chilled butter 4 ounce
  • Egg 1
  • Milk ½ cup
Ingredients for filling
  • Canned peaches
  • Granulated sugar 6 tbsp
  • Cream whipped 12 ounces
  • Icing sugar 2 tbsp
  • Vanilla essence ½ tsp
Method for base
  • Sieve flour, baking powder and salt, mix in butter, make a well in centre add eggs, milk, mix with fork to form a soft dough, turn on lightly floured surface, leave gently, press into 3 greased 8 inches pan, bake on 200 degree C for 15 minutes until golden.
Method for filling
  • Beat cream with icing sugar, spread 1 short cake over a serving platter, spread with peaches then cream, second layer of short cake, peaches and cream, final layer of short cake, spread cream over a top layer, decorate with peaches, cut into wedges.
To serve
  • Serve chilled.
