Vegetable Fried Rice Noodles

Vegetable Fried Rice Noodles


Ingredients
  • Noodles ½ packet
  • Rice boiled 200 gm
  • Egg beaten 2
  • Oil ¼ cup
  • Dry basil ½ tsp
  • Garlic chopped 5 – 6 cloves
  • Bean sprout 1 cup
  • Onion sliced 1
  • Carrot 1 medium
  • Button mushroom 5
  • Black mushroom 3
  • Green beans 250 gm
  • Green chilies 3 – 4
  • Spring onion 2 – 3
  • Sugar 1 tbsp
  • Soya sauce 2 tbsp
  • Worcester sauce 2 tbsp
  • Lemon juice 1 tbsp
  • Peanut (roasted) 25 gm
  • Coriander leaves 2 tbsp
  • Chili powder 1 tbsp
  • Salt to taste
Method
  • Cut 1 carrot, 1 onion, 5 button mushrooms, 250 gm green beans, 1 cup bean sprout and 2 – 3 green chilies into juliennes shape.Soak 3 black mushrooms in warm water for few minutes, now cut into juliennes and keep aside. Also chop 5 – 6 cloves of garlic.Heat ¼ cup oil in a pan, add chopped garlic and fry till golden brown. Now add 2 beaten eggs and fry well. Then add 200 gm boiled rice and ½ packet boiled noodles. 
  • Mix well.Add all the chopped vegetables with 1 sliced onion, 2 – 3 chopped spring onion, ½ tsp dry basil, 1 tbsp sugar, 2 tbsp soya sauce, 2 tbsp Worcester sauce, 1 tbsp lemon juice, 25 gm roasted peanuts, 2 tbsp chopped coriander leaves, 1 tbsp chili powder and salt to taste.Toast well on high flame, dish it out and serve hot.
