Chicken Vallejo

Chicken Vallejo


Ingredients
  • Butter 2 tbsp
  • Oil 1 tbsp
  • Onion sliced 1
  • Green chilies chopped 2
  • Tomatoes boiled 4
  • Tomato paste 2 tbsp
  • Salt to taste
  • Black pepper powder ½ tsp
  • Egg 3
  • Cheddar cheese 100 gm
  • Chicken breast sliced 2
  • Parsley ¼ bunch
  • Oregano ½ tsp
  • Crushed red pepper 1 tsp
Method
  • Heat 2 tbsp butter and 1 tbsp oil in a pan, add 1 chopped onion and sauté till softened.Now add 2 chopped green chilies and sliced chicken. Fry well for 3 – 4 minutes.Then add in 4 boiled chopped tomatoes, salt to taste, ½ tsp black pepper and 2 tbsp tomato paste.Cook for 2 – 3 minutes. Add ¼ bunch of chopped parsley, 1 tsp crushed red pepper and ½ tsp oregano. Cook for 3 – 4 minutes.Now put 3 eggs separately on top of chicken mixture. Cover and cook for 3 – 4 minutes.Then remove lid, spread 100 gm grated cheese on top. Cover and cook for another 2 – 3 minutes.Dish it out and serve hot.
