Toffee Apple Yogurt Muffins

I wanted to use up the last of the apples I got from my neighbour and also the last of the Total Greek Yogurt, so I adapted a basic muffin recipe to include these ingredients. I also found half a bag of fudge pieces in my cupboard so threw them in as well.  The mixture was quite dry but the muffins turned out really moist and they also kept well and were delicious when warmed through in the microwave for 20 seconds.

Toffee Apple Muffins
Makes 6-8 (but I doubled all the ingredients)

150g/5oz self-raising flour
1/2 tsp baking powder
pinch of salt
50g/2oz dark muscovado sugar
120ml/4fl oz Greek Yogurt
25g/1oz butter, melted
1 egg, beaten
2 peeled cored and chopped apples
50g/2oz fudge pieces

1. Pre-heat the oven to 200C/400F/Gas 6.  Sift the flour, baking powder and salt into a bowl.
2. Mix the sugar, yogurt, butter and egg in another bowl.
3. Fold the flour mix into the wet mix and then fold in the chopped apple and fudge pieces.
4. Spoon the mixture into greased muffin tins or paper cases.  Bake for 20-25 minutes until well risen and firm to the touch.  Leave in the tins for a few minutes, then transfer to a wire rack to cool.  Serve warm or cool.

Banana muffins





     I had a few ripe bananas laying around, so I decided to play around with a banana muffin recipe. Turns out very moist and not overly sweet. Ive been snacking on them all evening! My little Ginny pig is usually the first one trying my experiment.. I usually know if it tastes good when a 2 years old likes it and doesnt spit it out by the first bite. lol..

Ingredients


  • 1 cup granulated sugar
  • 8 tablespoons (1/2 cup) unsalted butter, room temperature
  • 2 large eggs
  • 4 ripe bananas
  • 1 tablespoon milk
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon pure vanilla extract 
  • 1 banana, thinly slice (optional for garnish)
  • Makes 12 muffins


Directions

Preheat the oven to 325 degrees F. Grease or spray on a muffin pan. 
Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
In a small bowl, mash the bananas with a fork or a potato smasher. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt.
Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears. Blend in the vanilla extract.
Scoop about 4 tablespoons of batter into prepared muffin pan mold, garnish with a slice of banana and bake 25 to 30 min at 350 degrees or until its nice and golden brown. Set aside to cool on a rack for at least 5 minutes. Remove muffins from pan, invert onto rack and let cool completely before serving.



Garnishing slices of bananas is completely optional..

Muffins

Pumpkin Cappuccino Chip Muffins
(adapted from Starbucks recipe)

2 c. flour
1 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1 c. milk
2 eggs
1/2 c vegetable oil
1 packet Starbucks VIA (I used 2 tsp. espresso powder instead)
1 c. mini chocolate chips (optional, but who are we kidding...everything is better with chocolate!)

BruCrew Additions
1 c. canned pumpkin
2-3 tbsp. sour cream
4 tbsp. extra flour
1 1/2 tsp. cinnamon

Preheat oven to 350*. Line muffin tins with cupcake liners. Mix together dry ingredients. Add wet ingredients and stir until combined. Do not over stir, batter should be lumpy. Add the chocolate chips...it isnt optional:-). Fill muffin liners 2/3 full. Bake for 22-24 minutes or until muffins spring back when touched. Cool on wire rack. Enjoy! Makes about 24 muffins.
